Whole Foods sits in the same plaza, I figured, "Why not make it today", so I drove over to buy the ingredients. It took a while again, I was trying to find the right potatoes, have you ever heard of waxy potatoes? I later found that "Waxy potatoes" means the skin of the potato must be waxy. I browsed the seafood section for 20 min, seriously, I asked the guy on the other side every fish question that came to mind. I think he got annoyed, hey it's his job. I left to find some other ingredients, then came back to the seafood section and asked a few more questions. Finally to his relief I decided not to go with salmon, but instead halibut. Mostly because they didn't have pre-cut salmon on skewers, but I'm glad I went with the halibut even though I was cheating a bit, having it cut and skewered before hand, I'm no Martha, yet. my total came out to be 17 dollars, this included a bottle of honey, also the fish was 10 dollars, a bit pricey for 4 small cuts of fish, but then again I don't know whats cheap and not cheap when it comes to seafood.
Prep: This meal didn't require much equipment. I ended up using a pot for the potatoes, a strainer, and a baking sheet, with foil. Praise the lord, hallelujah, clean up was a breeze. I coated the fish with extra virgin olive oil, sea salt, ground pepper, crushed chili peppers, and cayenne pepper, you know how I do what I do. Then washed the potatoes and dropped them into a pot of water with a generous amount of sea salt. The broiler was in a fury ready to cook some flesh, I popped the halibut in for 6 min. Instead of a spinach salad I decided on a compilation of greens, really I couldn't find a bag of spinach, so I settled for mixed greens, which is better, no? While the potatoes were sweating in the jacuzzi, I flipped the fish to cook another 6 min. It's a lot more relaxing to sit and wait for your food to cook, than to constantly check on it. The fish cooked to perfection, I was worried it would burn to a crisp, fortunatly the oven knows what it's doing. I had to congratulate my self on the fish though, it was pretty awesome coming out of the oven, thanks Whirlpool. What took light years was the potatoes! They just don't soften quickly, also I didn't poke holes or half them.
Final Stages: I kept the fish in the oven, resting peacefully on the bottom rack. Finally my light bulb went off and decided to poke holes in the potatoes. They were ready 15 min later as the directions said they would be. drained, I smashed them with the back of my wooden spoon, when properly cooked they smash easily, so Martha says. Ummm whatever, It took a little force. I dropped the smashed potatoes into the pool of greenery and added butter, salt and pepper, and gave it a hardy mix. At this point I was melting with anticipation for a bite, it looked and smelled so good! As I was plating I kept hesitating over the honey and how the fish would taste, I was worried it would give the fish a cloying savor, but holy molly, the honey was the whip cream on a slice of pumpkin pie. I added more honey, shhhhh, don't tell Martha.
Difficulty: 3/10, also I'm changing the difficulty of my last meal to 7/10.
